PROCEDURE
For Ginger Garlic Dressing:
Whisk together garlic, ginger, rice wine vinegar, white shoyu, canola oil, white sugar and black pepper.
To Serve: Gently toss salmon belly with avocado and ginger garlic dressing.
Serve in 2oz portions in small bowls and garnish with a pinch of scallion, sesame and sea salt.

1 oz garlic
1 oz ginger, fresh
1 g peppercorns, black
8 g Sugar
1 oz canola oil
1 oz white shoyu
5 g sesame oil
1 oz red wine vinegar
12 oz Norwegian salmon fillet, skinned and deboned
To serve
10 g sesame seeds, toasted
1 pinch sea salt
1 dl Cinnamon
1 bunch spring onion, scallion
